Friday Treat ~ Mini Hand Pies





The first two weeks went so fast and this one is flying too! I have some time today to work on treats for Friday treats. I grabbed this pie crust from my go to, Grocery Outlet, it was about to reach its pull date so it was .25! Just a quarter!  I just tossed it in the freezer. I pulled it out this morning.   I just mixed up some pumpkin and cinnamon and nutmeg and a little brown sugar and filled these then baked them! Just a few minutes of work, not overly sugary and pretty darn affordable!



Do you have a day of the week you make treats? Friday is our least busy day (but still busy) and I like to reward us all for surviving the week lol

Muffin Tops

 
Muffin Top Cookies? Just plain ol' Muffin Tops?
There isn't more sugar like in a cookie, but they are shaped like a BIG cookie. Call them what you want, they are easy and delicious and the kids will like them! They aren't dense like a cookie, lighter, like a muffin but the oatmeal in these ones gives them oomph!
 
 
I've made multiple varieties but don't always track what I add.
For these I did though! Banana Oatmeal Chocolate Chip.
 
I just used my basic muffin dry ingredients
1 3/4 AP Flour
1/3C Sugar
2 tsp. Baking Powder
1/4 tsp. Salt
 
 
Then I just added about 1C ish of liquids + 1 egg for the basic recipe.
 
For this one I added
1 BIG ripe banana all mashed up
2 Eggs
and 1/2 C Oats for bit of texture
1/4 C Mini Chocolate Chips
 
***The batter should be about muffin batter consistency, maybe slightly thicker***
Play around and try some different combos.
 
Bake 13-15 Minutes at 350 on a greased cookie sheet
I use a big cookie scoop to measure them equally

Bonfire Bars


These are super easy, only a few ingredients and they don't take long at all!


3Tbs Butter/Coconut Oil (or combo)
6C Golden Grahams Cereal
3C Marshmallows
2 Tbs Mini Chocolate Chips
3 MORE C. Marshmallows 

First spray your 9x9 (or 8x8) pan with nonstick spray. I just used some coconut oil
 In a saucepan melt the coconut oil or butter, then on medium heat, add 3C marshmallows and stir until it's all melty and combined.

*Turn oven on to broil*

Turn stove heat off, add 6C Golden Grahams Cereal. Stir it all together to coat.
Pour into pan and press down with spatula.
Sprinkle Chocolate Chips evenly

Add 3C marshmallows on top to cover evenly.

Put the pan under the broiler until marshmallows get all melty and crispy and brown and perfect!

Let cool, then
Good Luck Cutting them even ;)
Prepare to be sticky

Back to School Snack Mix

This is a fun, easy, not terrible snack for after school. The first day of school makes me think of apples and peanut butter and jelly sandwiches 🍎🍞

I don't usually measure but made some guesses this time! Add more of your favorites, you really can't go wrong!

3C Chex (or crispix or life, whatever is on sale!)
1C Freeze dried apples broken into little bites
1C Peanuts
3/4C PB chips 
3/4C Pretzels 

You can add dried strawberries too if you want to make it even more sweet. We didn't have any or I would have halved the PB chips and added some dried strawberries. Yogurt peanuts are a good alternative too. Might make it look a little less monotone hehe

Chicken, Asparagus and Lemon Pasta

First, if you are looking for a precise recipe, this isn't the place. I don't usually cook that way. I promise this is easy enough you can still manage!

I tend to get a little lazier when it's hot out, and I wasn't thinking about dinner until 4 or so. Checked the fridge and was able to throw this together (and this is why I need to meal plan!)
I sautéed 2 chicken breast, but grilled would be awesome too, in a little butter, sage and pepper. 

While that was happening I cooked some pasta, not my first choice for shape but ya pick your battles and the 6 year old won. 

Cut asparagus and threw it under the broiler with a little butter

Once the chicken was done I pulled it out and set aside, used the same chicken pan to make a little loose white sauce (butter, 1/2 & 1/2 and flour) added some lemon juice and that's it. Once the pasta and asparagus was done I mixed it all together and it was perfect!

Easy Cobbler


This is for sure my go to dessert!
It used to be cupcakes, but I have memorized this cobbler recipe, and I love it, it's perfect and versatile for what's in season. No weird ingredients and it doesn't have to look pretty. It's just right for the busy mom/wife. It isn't ever going to look polished or decorated, but it still looks good in its own rustic way. Easy to use a foil tray and bring to a new mama or friend.

Ingredients 
1 stick butter (melted)
1C sugar 
1C self rising flour
(you can use regular and add 1.5 tsp baking powder and 1tsp salt)
1C milk
1-2C fruit (I like more cake less fruit)
Little extra sugar for the top

Directions
Heat oven to 350
Mix flour and sugar together in a mixing bowl, add milk and whisk together

Add melted butter and whisk together, pour into greased pan. I used a 9x9


Then just sprinkle or scoop your fruit onto  batter 

Sprinkle with sugar! Depending on what size pan you use, the amount will vary. I don't measure, I just sprinkle.

Bake at 350 degrees for 1 hour.

Serve it with ice cream, or have it for breakfast (my fave, so naughty)

Birthday Bark

I love this easy, 3 ingredient treat I can throw together between errands and baby wrangling! 


All you need is 
~6oz semisweet (or dark, whichever you prefer) chocolate chips this was just under a cup for me.

~12oz white chocolate chips 

~vanilla cake mix, dry

Line a small cookie sheet with parchment paper.
Melt the semi sweet chips and spread in thin/medium layer on parchment paper.

Refrigerate 25 minutes minimum.

Once that's done, melt the white chocolate chips and add 2 tablespoons dry cake mix. Mix well. Let sit for a couple minutes, so it doesn't melt the other chocolate.

Cover the semisweet with white chocolate and add some sprinkles! 


Let chill in fridge for 30 minutes, break or cut up and poof! Birthday Bark 💕

I also realize that while many of these have been on my Meal Plans I haven't shared all the recipes! I have been really really struggling to try new things, or cook anything outside of our common 4-6 things. Having this big list here, easily accessible should help me! Elderberry Lemonade

 I've been trying to reduce some of the coffee I drink, just a little, and the weather has been warm here. Lemonade has been sounding so good and it's been an easy switch!


I am a big fan of flavored lemonade, other than it usually has a whole lot of sugar in it. I don't typically make a big batch of this and with these handy powdered lemon I don't have to!  I use

 2 packs of lemon, 
Water to fill my jar and then I add some 
Elderberry Syrup and ice! 

So good and I love the elderberry benefits! I use this recipe for the syrup.

Better than Reese's Peanut Butter Bars

Nothing like ruining week old resolutions! I promise these are worth it! 
SO good! No Bake, So Fast and Easy!



Ingredients
~2 packages (about 2C crushed Graham Crackers)
~1/2C Ground Regular Oats, or oat flour
~1C Melted Butter
~2C Powdered Sugar
~1 1/4C Peanut Butter
~2 C Chocolate Chips (I prefer semi sweet)


Directions
I just throw the graham crackers and oats in the blender/food processor and grind them up together.
While that is working, I line a 9x13 cookie sheet with foil.
 
Once the graham crackers and oats are ground together, add the butter, powdered sugar and peanut butter. Let that all blend together. Then spread the PB mix on the cookie sheet as even as you can. 
I spray my spatula with cooking spray first.

Then melt the chocolate chips and spread it over the peanut butter layer.
Refrigerate for 3 hours! Then if you want nice edges, leave them out for 20 minutes or so and cute with a pizza cutter. If you don't care how it breaks up, cut it right away.  I cut them and then put them back in the fridge. Store in an airtight container in the fridge, if they make it that long.  They don't here!

Quick and Easy Creamy Chicken and Rice Soup

I love this soup for a couple reasons.
1. It's super easy, fast and doesn't ruin the clean kitchen
2. It's not expensive and makes enough for us, but easy to add more and have leftovers!


What you need
 1-2 Tbs Butter
1 Good Sized Carrot~Diced
1 Celery Rib~Diced
2~14.5 Oz Cans Chicken Stock
1/2 C Uncooked Rice  
1/2 Tsp. Dried Basil
1/2 Tsp. Dried Sage
1/2 Tsp. Thyme
1/4 Tsp. Black Pepper
1C Water
4Tbs Flour
1 Can Evaporated Milk
2 C. Cooked Chicken   Shredded, diced, pulled  you choose

*You can also add
 1/2 C chopped onion with veggies
More stock if you want a thinner soup. It gets pretty thick!
  

Directions
In a pot big enough to hold everything add butter, and veggies on medium high heat. Saute until veggies are softened. 
Add Chicken Broth, rice and spices. Bring to a boil 
Reduce heat to low and cover until rice is cooked. About 15 minutes here.
In a cup or bowl, combine the water and flour. Stir into soup
Add Evaporated Milk
Bring to a boil, 2 minutes. Stirring continually.
Add chicken and stir until chicken is heated through.

That's it! So maybe a half hour of time! Even less if you have carrots and celery chopped in the freezer!   I think you could also do wild rice, but the time would be a little longer.
Make a triple batch, throw some in the freezer and have dinner made for another time!

Chicken Spaghetti

This is a favorite around here! For all the right reasons. Good to make ahead and toss in the fridge or freezer, sneaky way to add some extra protein, warm and cheesy. Reheats SO well!

There are lots of versions of this, I tried a few but we try to avoid the cream
based soups and processed cheese. 
This is what we ended up with!

2C Shredded Chicken~ whatever kind you have/like
1lb Spaghetti~ Broken up
1 Can Diced Tomatoes and Green Chile's 
1C Cottage Cheese
1tsp+Cumin
1tsp+ Oregano
Salt and Pepper
1-2C Shredded cheese~Cheddar, Cheddar-Jack  whatever you have/like


Cook Spaghetti, Drain, then I just put it back in the pot.
Add everything but the shredded cheese and stir together well.
Transfer to a casserole dish, either sprayed with cooking spray or lined with foil if you are freezing.
Spread cheese to cover
Bake at 350 for 20-30 minutes until the cheese is melty and bubbling.

September {Week 3} Meal Plan


We are about to enter a crazy time in our lives with multiple sports going on at the same time!
Chances of us eating all together are going to be slim for a while, will be taking advantage of crock pot, pressure cooking and grab and go meals. Don't have a pressure cooker? I would say they are a busy moms best friend! This is the one I have, and love. Has paid for itself already, in just a few months.

Monday~Chicken Tortilla Soup
No canned soup in this recipe!




Tuesday~Tacos
Just throwing some ground beef in the pressure cooker, saute for a few minutes, then adding some seasoning and a little beef stock. Pressure cook for 20 min and leave it on warm until we get around to eating!

I promise the couple surprise ingredients make it extra tasty and very fall like!

Thursday~Pressure Cooker Potatoes
Easy to use up leftovers!
 
 
Our first day this week with no sports! Can't wait to just sit and be with everyone at the same time!
I made this recipe a few times, it's SO good but goodness I don't have time to make it often. Changed it up a bit and now I do it in the pressure cooker then under the broiler for a few minutes. In the pressure cooker 1 lb of pasta, 4 C of water, salt and nutmeg.  Pressure cook for 4 minutes, release pressure, add the rest of the ingredients besides topping, stir it up a few minutes and spread in a baking pan, top with crackers and stick it under the broiler for a few.

Homemade NO JUNK Nutrigrain Style Bars

Y'all, put DOWN the Nutrigrain bars! I know they seem like a good idea, I mean, Nutri is right in the name, not much nutritious there though, I won't share the ingredients here but just glance at how long that list is and how much dye is in it. Fruit is not even the first ingredient in the filling.  
I get it, us Moms need a break once in a while, and the concept doesn't seem like a bad way to get that break. These are so easy for busy mornings and last minute snacks but there is a better way.

I whipped these up this morning and they smell SO good! It didn't take long to make at all, even wearing the baby while I did most of the prep.
Totally worth it!


Ingredients

1 1/4 C Flour 
1C Oats
2 TBSP Ground Flax
1/4 Tsp Baking Soda
1/4 Tsp Corn Starch
1/2 Tsp Pumpkin Pie Spice (or cinnamon)
1/4 Tsp Salt
6 Tablespoons Coconut Oil/Butter Room Temperature (I used a combo)
2 TBSP Honey
2 Eggs
1 Tsp Vanilla

Filling
Fresh or frozen fruit or Jam/Jelly
*optional sweetener

Directions

~Preheat oven to 350 degrees
~Prep your baking sheet with parchment paper
~Combine dry ingredients in a small bowl
~In a larger mixing bowl combine oil/butter, honey, eggs and vanilla
~Slowly add all dry ingredients into wet mixture until a ball forms.
~Make Filling
I just mixed about 3/4 C previously frozen, thawed strawberries with a pinch of corn starch and blended them up in the blender.  You can use Jam instead alternately.

~Flour your clean working surface lightly
~Using half of the dough, roll out until about 8"x10" rectangle.
~Cut into 4"X 5" rectangles
~Spread 1-2 TBSP filling on center of each rectangle, be sure to avoid edges.
~Fold the sides on top of the filling and pinch the seem
~Fold ends in and seal. I used a fork to seal the ends.
~Optional* sprinkle some oats on top
~Place on cooking sheet
~Repeat with other half of dough
~Freeze or refrigerate for a little bit to let dough firm up. I gave mine about 7 minutes in the freezer.
Bake for 22 minutes or until golden on the edges and top.
Mine were a little pale, and not as brown as I wanted. I turned the broiler on for the last 2 minutes to get the right color.

These are SO much better tasting than the packaged kind and no junk! The outside is barely crispy but the inside of the dough is still very moist and slightly dense. The filling was just sweet enough. Although I did use Oregon Strawberries we picked over the summer, and Oregon really has THE best, sweetest strawberries. If you are using fresh strawberries out of season, you might want to add a little sweetener, like honey, to your fruit mix. 
These really taste like breakfast and not like dessert, not overly sweet.

I didn't add enough fruit when I did it, I only used 1 TBSP, I would suggest closer to 2.

 My first go around are UGLY.

Second round of putting them together was much easier. I didn't have a baby on my chest while I worked ;)
I will for sure be adding these into the rotation of things to make on Sundays for our weekly prep.
I am storing mine in an airtight container but I am also going to freeze 1 or 2, well if I can keep them around that long, and see how they do from the freezer.

PB Cinnamon Toast Treat

I don't even know what to call these other than delish!
 These treats were super easy to toss together. Just like Rice crispy treats, except there is a little less butter I think, and I added some PB.

Ingredients
4-5 Cups Cinnamon Toast Crunch Cereal (or similar)
3 TBSP Butter
1/3 C Peanut Butter
1 Bag Mini Marshmallow

1 lined 9x13 baking pan

 
Melt the PB, Butter and marshmallows together, either in the microwave or stove top.
Add the cereal and stir to coat 
Smoosh down into the baking sheet
let it cool and set, cut and enjoy

Apple Pie Energy Poppers

Just tried these for the first time last night, they went really fast! Super tasty and super easy to throw together!



~Ingredients~
3/4C Dried Apple Rings
1C Pitted Dates
1/2 C Oats
1/2 Tbsp Cinnamon (I used Pumpkin Pie Spice)
**If I was a little more awake when I made them, I would have added some flax meal and some walnuts would have made them even better!

~Instructions~
Dump all the ingredients in a food processor and blend until doughy.
Roll into balls (I used about 1 Tbsp. per ball)
Put on a parchment paper lined tray
I set ours in the fridge for a bit, then moved them to an airtight container.

Deeelish Mac 'N' Cheese

First I want to apologize for the lack of pictures. It smelled SO good that I think it was out of the oven for all of 5 seconds before there was a fork full, or 5, out of the pan.



I really never cook with a recipe because so many of the people here are picky eaters. I was a little more aware when I was making this about ingredient amounts!

A BIG bowl is a requirement and if the cottage cheese thing scares you, I am the ONLY person in this house that likes cottage cheese. I didn't tell anyone it was in there and no one asked or questioned it.

1lb pasta. I used elbow noodles
1/2 C Flour
2 Tbsp. Butter
2-3C Milk ( I didn't measure)
1C Cottage Cheese
1/2 C Sour Cream or Plain Greek Yogurt
1/2 tsp Nutmeg
Salt and Pepper to taste
3 C Cheese, shredded  I used 2 C smoked Cheddar and 1C Cheddar Jack
1 Sleeve Ritz or Townhouse Crackers
1 Tbs Butter 

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Preheat oven to 350
While the noodles were cooking
Make a white sauce, a little thinner than gravy with consistency with flour, butter and milk.
Once that is done I added the cottage cheese and greek yogurt.
Drain the pasta
Combine the pasta with sauce
Add seasoning
Stir in Cheese 
Pour into 9x13 " Pan
I used my ninja to make the cracker crumbs
cover the entire top with cracker crumbs
melt the last 1 Tbs of butter
Pour over the top

Bake, uncovered, for 40-50 Minutes at 350
The edges get just a little crispy and the inside is gooey and super! NO ONE complained about dinner. That is pretty much a miracle around here!!

Homemade Marshmallows~ Fun Treat and Gift

Friday is usually my least busy day, last Friday I had just enough time to whip these up!


We are packaging some up for a couple of friends and enjoying the rest. They are SO much better than store bought! This particular recipe doesn't use corn syrup, that was a plus for me!

Pretty basic ingredients
Water
3 Packets of Gelatin
Sugar
Evaporated Milk
Vanilla
Powdered Sugar
Corn Starch


I did add something, it really makes all the difference! This 1 little ingredient makes them so whimsical and perfect!
Edible Glitter! If only the pictures showed all the sparkle!
You can see a little but not nearly as much as in real life!
These would be perfect at a princess of FROZEN party! 

 *Olaf Approved Snow Bricks

We just packed some in a mason jar, perfect for your hair lady, neighbor, get well soon, etc. Easy and homemade and who doesn't love marshmallows?!
You can alter the flavor by swapping vanilla for other flavors. I wanted basic vanilla this time.
You can add some food coloring into the first step for colored marshmallows too!

New Favorite Quick Dinner

I made these a few weeks ago from this recipe, they were good but I knew I could change them up to be more to our taste!

I started with 1-2 C of shredded, chunked, leftover, whatever chicken
Mixed in 3 Tablespoons of this sauce

( it's spicy so adjust to your taste) into
2 Tablespoons cream cheese (softened) with 1C shredded cheese
We used Cheddar and Jack cheese cause that is what we had but I don't think you can go wrong with others.

Then I mixed in the chicken and combined well.
 Spread some in a line towards the edge of a soft taco size flour tortilla and rolled it up tight.

Placed into greased pan (I just used spray olive oil)
Repeat until the pan was full and then sprayed the tops with non stick spray.
I covered with foil and baked 20 min at 350. Removed foil and baked another 10, if they aren't as brown and crunchy on top as you would like you can stick them under the broiler for a couple minutes.


Serve with Sour Cream & more Sauce if you like it spicy, and a salad!
That is it. Next time I will for sure be blending some hidden veggies in!

Meal Plan Monday Week #1

It's almost a shiny new year!
One of my goals is to keep up on the meal planning, and sticking with it!
 
I'm not perfect, things come up, and we don't eat all organic but I am doing my best to keep our budget on track and limit the stress that can go on at meal time. We usually like to eat dinner around 6:00. This means I can't wait until 4 to decide what to make!  I am hoping to share our meal plan every Monday. While I will try to avoid duplicate weeks, we have some picky eaters and I find that sticking to what we know and love saves on the budget too. The less new ingredients we buy, the less we are spending.
Some of these recipes will be new to me, ones I haven't tried yet, those are the iffy days.
 
Today is my birthday and a weekend, that means I haven't cooked much the last few days, I miss it!
With this cold weather I am still loving the comfort foods!
 
Monday~ Pork Roast and Mashed Potatoes
We keep things simple with pork roast. Crock pot, chicken stock, thyme, cumin, carrots and celery salt (no one here likes celery) a little Worcestershire sauce and some white wine. I don't ever measure. But I would guess 1 Tbsp. of W sauce, 1/3C wine, 1 12 oz. can of stock, and 1/2 Tbsp. of spices. We will have something green too. Probably green beans.
 
Tuesday~ We will probably get pizza tonight. Happy New Years!
 
Wednesday~ BBQ Pulled Pork Sandwiches and salads
Using leftover Pork, pulling a few burger buns out of the freezer and an easy salad.
 
Thursday~ Meatloaf & steamed cauliflower
Growing up there were never onions in anything, hubby doesn't like them so nothing I make has onions in it. I know onions are a staple in lots of meatloaf recipes. None here, but I do add some other stuff I have been told is a little weird! I use ground beef or turkey, or both. Oats or cooked brown rice instead of bread crumbs (I rarely measure, just add until it looks right), and I add 1/2C ish of sunflower seed kernels. Then just the regular seasoning and cook time!
 
Friday~ Baked Chicken w/veggies & sauce
I know I will have time to bake some chicken, and I can usually hide some veggies in sauce (homemade cream of chicken soup) and some rice or pasta, whichever we have more of.
 
Saturday~ Goulash from All She Cooks 
Haven't tried this one before!
 
Sunday~ Chicken Enchiladas
Using the rest of the chicken I baked the other day, and this recipe.
