Meal Plan {October Week 2}



Kids are out of school for most of the week, guessing we will be with projects a lot of the week before sports in the evenings. Quick and easy is my goal for the week!

Monday~Pork Roast
In the pressure cooker with green enchilada sauce and rice! No recipe, it's too easy for that!
Because we could use some leftovers for Wednesday! And everyone loves this!
Wednesday~Tater-tot Casserole
I have made a couple versions, not sure what I will throw together, depends on what we have in the cupboard!  
Thursday~Taco's
Easy Easy Easy! We need an easy day!

Friday~Grilled Cheese & Soup
Or mini pizza's. I haven't decided yet. 
Whichever we have more of the ingredients for and the time for!

Meal Plan September {Week 5}


After Birthday Parties last week, I am excited for a little bit more mellow week.

Monday~Pork Burritos
Easy Meal for a busy day! Roast and green enchilada sauce in the pressure cooker and rice. All stuff I can do ahead of time!

Tuesday~Spaghetti and Meatballs
We love the Trader Joe's mini meatballs for busy nights!
I made a double batch of marinara last week, just have to pull it out of the freezer!

Wednesday~Soup
I don't know what kind yet. Something with chicken.
Maybe chicken pot pie soup, or chicken and dumplings. Making double chicken for Thursday's meal.

Using the chicken made Wednesday and prepping it all in the morning!

Friday~Mini Pizza
English muffins, toasted with the fixins and then broiled.

September {Week 3} Meal Plan


We are about to enter a crazy time in our lives with multiple sports going on at the same time!
Chances of us eating all together are going to be slim for a while, will be taking advantage of crock pot, pressure cooking and grab and go meals. Don't have a pressure cooker? I would say they are a busy moms best friend! This is the one I have, and love. Has paid for itself already, in just a few months.

Monday~Chicken Tortilla Soup
No canned soup in this recipe!




Tuesday~Tacos
Just throwing some ground beef in the pressure cooker, saute for a few minutes, then adding some seasoning and a little beef stock. Pressure cook for 20 min and leave it on warm until we get around to eating!

I promise the couple surprise ingredients make it extra tasty and very fall like!

Thursday~Pressure Cooker Potatoes
Easy to use up leftovers!
 
 
Our first day this week with no sports! Can't wait to just sit and be with everyone at the same time!
I made this recipe a few times, it's SO good but goodness I don't have time to make it often. Changed it up a bit and now I do it in the pressure cooker then under the broiler for a few minutes. In the pressure cooker 1 lb of pasta, 4 C of water, salt and nutmeg.  Pressure cook for 4 minutes, release pressure, add the rest of the ingredients besides topping, stir it up a few minutes and spread in a baking pan, top with crackers and stick it under the broiler for a few.

I've been putting off unpacking by doing so much other randoms stuff instead!

Thankfully, cooking is one of those things I would rather do than unpack!

Meal Plan Monday

Our new kitchen is a MESS! I am slowly, very, very slowly getting it organized. The pantry is going to be a hard adjustment. I already miss our big walk in pantry!  
I am also pretty sure we still have a container of food in the storage unit. I am still going to attempt a plan this week and see how it goes. I feel like such a crazy person, haven't made a meal plan for the month, went grocery shopping and I swear I didn't really get anything. I don't think I was prepared for how hard moving was going to be for me.

Monday~Chicken, rice and green sauce
I am probably going an easier route and just using green enchilada sauce (with some blended spinach in it, don't tell the kids) instead of homemade sauce.

Tuesday~Bacon Mac 'n' Cheese
I am going to try to put together a new dish, no recipe so we will see how it turns out.
Having salad with it.

Wednesday~Chili and Rice

Thursday~Chicken Spaghetti
I love how easy this is to throw together in the day as I have time, then I can just bake it as we get close to dinner!
Friday~Grilled Cheese

Meal Plan Monday

It's that time again! I swear the weeks are flying by since our little guy was born. I am not ready for it to go by so fast! Our kids have a lot of this week off of school so we are not as rushed for time. 

Monday~Enchilada Tater-tot Bake
 This is the recipe we use, altered a little for our family 
Since we need ground beef for this meal, I am thawing and browning enough for 2 meals. Save me a step in the next couple of days.

Tuesday~Chicken and Pasta 
I already have some baked shredded chicken in the freezer, going to thaw that, toss it with some veggies and pasta in some white sauce with herbs. Easy and everyone will eat it.
Wednesday~Taco's
Using up the other part of the ground beef!
Thursday~Meatballs and Potatoes
We all like the Trader Joe's Turkey Meatballs, Thursday is a busy soccer day for us. This is easy to toss together and doesn't require an extended time over the stove. I usually do mashed potatoes but on busy days I "bake" the potatoes in the crock pot during the day.
Just wash, poke and wrap in foil. In the crock pot for 4 hours on high or 8 hours on low.

Friday~Chicken Spaghetti
I started making this recipe just a few months ago. Everyone here will eat it without complaining or bribery. I do alter the recipe a little, no canned soup here and we use a bit less sour cream.

I'm BAAAACK! Meal Plan Monday!

Our sweet little Hawkins is 2 little weeks old already! It has gone by SOO fast!

We are still getting back into the swing of things and how our new bundle changes how we do things.
Thankfully, I planned and prepped about a months worth of meals ahead of time.
I still need to plan though, or we will have a whole lot of still frozen food come dinner time!

This week we are having

Shredded Beef Taco's
I just cooked a big roast in the crock pot, we used half last week and the rest for this meal.
Cooking once, eating twice is a must right now!

Loaded Potato Soup
We are eating like it's Fall around here, too bad it's still 70-80 degrees!
Crockpot Meatloaf
This is new to us, I am a little worried about how it will turn out!
Chicken Tortilla Soup
In the crockpot, Thursday is a busy day for us!
Chili & Brown Rice
Sneaking in a few ingredients the kids would normally object too!

Weekends are a little easier for us, I don't feel like I have to plan AS much!

Meal Plan Monday~ Week 27


I don't really know if it's the 27th week, just guessing!  We are finally back from vacation and I want to get what tiny part of our Summer life in check that I can. 

As much as I was looking forward to not having to plan meals around baseball, All Stars started last week. I was really hoping we were done with Red Solo Cup Dinners to go! And I forgot it is 4th of July week, we will have a short week here!

I am also hoping to really crack down on our budget, I know some of y'all are looking for inexpensive meals. I will do my best to give a price break down (for our area) at the bottom!

Monday~PB and Bacon Sandwiches
Been craving like crazy, I would like to blame the baby on this one!


Tuesday~Crock Pot Pork Roast
Nothing fancy, pork, carrots, potatoes and seasoning.

Wednesday~Chicken and sauce w/veggies
Usual, rice or pasta with baked chicken and some sauce I can hide veggies in for the kids!

Thursday~ Potato Soup (If we are here)

Monday~ Bread $0.50 (bread store 1/2 loaf) Bacon $1.25 ( 1/2 package) 
PB, not enough to count. Fruits and Veggie sides $2 (everyone has something different, depending on what they like) Cucumbers, apples, bananas and baby carrots.

Tuesday~Pork Roast $4.00, Carrots $0.50, Potatoes $0.50. Chicken Stock $0.50. Corn Bread $1.00  The rest is such a small amount, not enough to figure.

Wednesday~Chicken $2.00, Rice $0.50, Veggies $1.50, Sauce $0.50 (homemade)

Meal Plan Monday~ Week 22

Hope everyone had a wonderful Memorial Day!

We have NO groceries, for sure on the list of to do's tomorrow.

Trying a couple new recipe's this week.

Tuesday~Flautas 
I just used some leftover chicken shredded it with some salsa and cream cheese. 
Mixed in some shredded cheese and rolled into soft taco shells. Spray pan before rolling them up, bake at 350 for 30 minutes.
Used this recipe as a guideline but I made it today before we had groceries so I improvised. 

Wednesday~Pork Chops & Veggies

Thursday~Grilled Cheese & Soup
These have been a major craving for me lately, 
in the rotation a little more often than usual right now.

Friday~Chicken Spaghetti
Using a couple different recipe's and making them work for us, no canned or processed and no expensive ingredients!

Saturday~Soup
I am not sure what kind yet, I am waiting to see what's a deal at the market.
Has to be in the crock pot, too many games and birthday parties

Finally broke down and went grocery shopping!

Now that we have some groceries around here I have no excuse not to stick to it.

I cooked two times the ground beef so I can skip that later this week.

Planning on making a big bath of chicken too.

Wednesday~Sheppard's Pie

Thursday~Tortellini and Chicken with Pesto
To use some of the chicken and have something easy to throw together
Friday~Salmon and roasted veggies
I need easy by the end of the week!

Saturday~Chilli
We have plans that day,  I know I won't get around to making anything if I don't throw it in the crock pot. Hoping I still have some pumpkin!

Easiest way to use the rest of the veggies that need to be used up!

I bake ours in the oven, I know it's not very St.Patrick's Day of us.

Meal Plan Monday~ Week 10

          

This week is already full of issues! I am home sick from work today, just hoping I feel better before someone else gets sick! Doing my best to stick with easy meals this week, and some repeats. Although, if I don't make it to the grocery store we are having PBnJ's all week.

Monday~Meatball Stroganoff
We didn't have it last week, too many leftovers!

Tuesday~Teriyaki Stir Fry
We got some super noodles at Costco last trip there, the kids loved them and they are easy to throw together.

Wednesday~Mini Pizzas
Kids favorite!
We just roll out caned biscuits and top them with pizza stuff and bake like the package directs.

Thursday~Ravioli and Salads

Friday~PB and Bacon Sandwiches
Easy fave over here, and good for the budget!

Saturday~Chicken with Rice and veggies
I like to hide the veggies in some cream of chicken soup ( homemade, not canned)

Sunday~Chicken Tortilla Soup

Meal Plan Monday~ Week 8

I am off for a few days this week, excited to do some real cooking this week!


Monday~Ham 
Didn't make it yesterday, we had lots of leftovers still!

Tuesday~Taco's

Wednesday~Salmon and orzo with asparagus
I just put the salmon fillets on foil under the broiler for 7 minutes per side with a little butter and salt and pepper. Super easy!

Thursday~Grilled cheese and ham sandwiches

Friday~Tortellini and pesto
Easy and inexpensive. Thanks to Trader Joe's!

Saturday~We ended up going on a family date last Saturday, 
so I am going to try the enchilada bake this weekend instead!

Sunday~Use some leftovers!


I am just excited to be home with the kids today, no school! Then a couple more days to get some stuff done around here.  Happy Monday!

Meal Plan Monday~ Week 7

I did SO much better with last week's meal plan, although we had sick kids and were snowed in so I had a little extra time. I didn't get the turkey out though! And we haven't been ANYWHERE in days thanks to foot of snow and ice we got over the weekend. I am just planning on using what we have at home and hoping I swing enough meals.

Monday~Potato Soup

Tuesday~Make That Darn Turkey!
I like to put orange slices under the skin and just a little butter on top towards the end. Nothing too fancy!

Wednesday~Steak Quesadilla's

Thursday~Turkey Sheppard's Pie (using leftovers!)
For the kids, I just layer some turkey and gravy, corn or whatever veggie for the day, a little cheese and then mashed potatoes in a little ramekin. 

Friday~It's Valentines Day! I think we will get take-out!

Saturday~ Turkey Enchilada Bake
This will be a new recipe.
I am just going to layer some tortillas, turkey, sauce, cheese and probably some olives.
I am going to use green enchilada sauce and blend as much spinach in it as I can.

Sunday~Ham and roasted veggies!

Meal Plan Monday~Week 6

Our weekend was filled was craziness, 2 birthday parties and then the Super Bowl. I haven't prepped anything and I have no idea what is in our fridge! Chances are this plan will change once I have recovered enough from the weekend to actually LOOK in the fridge! I would rather not have to spend any additional money on this weeks meals. Hoping these will work out that way! We have big budget goals for February too!


Monday~Pizza.. It's our girly's birthday today!
I have NO idea how 7 years have passed since that day! I can remember SO much about it, feels like it has been weeks, maybe months but absolutely not years.

Tuesday~ Beef Stew with lentils, cause I didn't make it last week! Horse riding lessons start again, 6-8 PM. I have NO idea when the actual eating of dinner is going to happen.

Wednesday~Probably leftovers, chicken taco's as a backup
Something with Chicken is always my backup!

Thursday~Chicken Chili, because I will already have chicken thawed and mostly ready!

Friday~Grilled Cheese and Soup. By the end of the week I am going to be ready for easy!

Saturday~Turkey. I really need to make some room in the freezer! Hopefully I remember to take it out in enough time to thaw! Always the problem I run into.

Sunday~Leftovers with Turkey. Probably Wild Rice and Turkey Soup.
