Friday Treat ~ Mini Hand Pies





The first two weeks went so fast and this one is flying too! I have some time today to work on treats for Friday treats. I grabbed this pie crust from my go to, Grocery Outlet, it was about to reach its pull date so it was .25! Just a quarter!  I just tossed it in the freezer. I pulled it out this morning.   I just mixed up some pumpkin and cinnamon and nutmeg and a little brown sugar and filled these then baked them! Just a few minutes of work, not overly sugary and pretty darn affordable!



Do you have a day of the week you make treats? Friday is our least busy day (but still busy) and I like to reward us all for surviving the week lol

Bonfire Bars


These are super easy, only a few ingredients and they don't take long at all!


3Tbs Butter/Coconut Oil (or combo)
6C Golden Grahams Cereal
3C Marshmallows
2 Tbs Mini Chocolate Chips
3 MORE C. Marshmallows 

First spray your 9x9 (or 8x8) pan with nonstick spray. I just used some coconut oil
 In a saucepan melt the coconut oil or butter, then on medium heat, add 3C marshmallows and stir until it's all melty and combined.

*Turn oven on to broil*

Turn stove heat off, add 6C Golden Grahams Cereal. Stir it all together to coat.
Pour into pan and press down with spatula.
Sprinkle Chocolate Chips evenly

Add 3C marshmallows on top to cover evenly.

Put the pan under the broiler until marshmallows get all melty and crispy and brown and perfect!

Let cool, then
Good Luck Cutting them even ;)
Prepare to be sticky

Birthday Bark

I love this easy, 3 ingredient treat I can throw together between errands and baby wrangling! 


All you need is 
~6oz semisweet (or dark, whichever you prefer) chocolate chips this was just under a cup for me.

~12oz white chocolate chips 

~vanilla cake mix, dry

Line a small cookie sheet with parchment paper.
Melt the semi sweet chips and spread in thin/medium layer on parchment paper.

Refrigerate 25 minutes minimum.

Once that's done, melt the white chocolate chips and add 2 tablespoons dry cake mix. Mix well. Let sit for a couple minutes, so it doesn't melt the other chocolate.

Cover the semisweet with white chocolate and add some sprinkles! 


Let chill in fridge for 30 minutes, break or cut up and poof! Birthday Bark 💕

4th of July Goodies

Between Pinterest, online magazines and all these wonderful blogs I am pretty sure I could share a hundred different CUTE ideas for treats for 4th of July!
I want to have some treats ready since it feels like it takes SO LONG for it to get dark enough for sparklers!

This one is really pretty and looks really complicated!

These little cheesecakes are simple and cute!

I used the BIG star marshmallows to make some S'mores Pops, and added the sprinkles to the cracker mix so they stick a little better. They don't look much like stars though.. they look like chubby stars!

These are SO cute, and you could do these for any event.. but the flags are SO sweet!

These are still a fave of mine, I have a fondness for pies :)

Cake balls have never looked more patriotic!

This would be an easy make ahead goody! (I need help with that since we will have NO kitchen for the 4th )

Mardi Gras!

Is soo soon! And I feel like since I have major slacked on Valentine's day I need to make up for it!
Nothing too major but who doesn't love beignets?!
Planning on making some of the cheater version with some praline sauce, I'm using this recipe from Family.com


Ingredients
    1 cup packed light brown sugar 1 can (12 ounces) evaporated milk 4 Tablespoons unsalted butter 1/2 cup chopped pecans 1/2 teaspoon vanilla extract
Directions
  1. In a heavy bottomed sauce pan combine butter and brown sugar over medium-high heat. Stir until thick and sugar begins to dissolve.
  2. Add evaporated milk and stir well. Heat until bubbling. Continue to cook and stir for 10 minutes.
  3. Remove from heat and add pecans and vanilla. Stir well and let cool for 10 minutes or until slightly thickened before serving.

The kids loved them last year!

If the cheater version isn't for you, I've seen the Cafe du Monde mix at Cost Plus!

Another option would be to make these Mini King Cakes from Pillsbury!

Biscuits and Chocolate Gravy!

That's what we had for breakfast Christmas morning!
I was a little scared to try a new recipe on Christmas but I am so glad I did, they turned out great!



The kids had theirs with whip cream and sprinkles 
BUT, I am fond of bacon, so bacon on top for us!
I found a couple different variations of the recipe, all basically the same so I decided to try it until it looked/tasted right. I made a LOT, easily could have made half this I think!

In a bowl I mixed together
1 1/4C sugar
1/2C Coco Powder
1/2C Flour
1 1/2 tsp Cinnamon

I stirred those together well to make sure there was no lumps
you could use a sifter if you needed to, I just used a whisk.
oh and salt, a couple pinches!
Then in my pot I measured 4 c of milk,  I used nonfat but I am sure any will work fine.
I warmed the milk up a little before adding the dry mixture in and whisking like crazy.
I just kept stirring it on med/high heat until it thickened up and there were no lumps.
Once it was done I added about two tablespoons of butter (I didn't measure it, but all of the recipes called for butter) 
And then about 1/2 tsp of vanilla.

It was pretty easy, just took a few minutes and the kids all liked it! Not an everyday breakfast, but fun for a special treat!

Thanksgiving Desserts

So I think I am narrowing down the list of what to make for goodies!

I have a whole board on Pinterest JUST for Thanksgiving and Fall desserts! Find it here 
I think I want to make 3 or 4 things!
We have a pretty big family and everyone likes something different. I plan to make only Fall-ish desserts but I am having a hard time narrowing it down, so I think I will go with 1 apple/fruit dessert, 1 pumpkin dessert, 1 chocolate and 1 of something else!

I know for sure I will be using my mini pie maker and making some pies, different varieties so I am not looking at any other pie stuff!

these are also kinda pie ish, apples rolled in crescent rolls

I really have to decide soon!

Now that soccer is over for us I have plans this weekend to clean out the pantry and fridge to make room for the new ingredients!
