Muffin Top Cookies~Banana Nut




Everyone knows the best part of the muffin is the top, some company was even smart enough to make a pan that JUST makes muffin tops. I don't have one of those, so I made some changes to my regular Banana Nut Bread recipe to try it out cookie style! Turned out amazing, the kids LOVE them!

Ingredients
1/2 C softened butter
1C Sugar
1/4C Brown Sugar
1 egg
1 egg white
1 tsp Vanilla
1 tsp Baking Soda
3 ripe bananas
1 1/4 C AP flour
1 C Oat Flour (or whole wheat, whatever you have I am sure will work)
1 tsp Cinnamon
1 tsp Pumpkin Pie Spice (or you can do clove and nutmeg, whatever you have)
1C (or more if you like) Chopped Walnuts

~Directions~

Preheat Oven to 350*
Line Cookie Sheet with Parchment Paper (if you have it, I did mine without and they turned out just fine)

Combine butter and sugars well, until fluffy.
Mix in egg and white to mixture, and vanilla

In a seperate bowl
Mash bananas
Sprinkle baking soda over them
let sit while you mix dry ingredients

In another bowl
Combine Flours, salt and spices.

Combine bananas with sugar and butter mixture until well combined.
Then add flour mixture.
Once combined fold in nuts.

 I used a cookie scoop to drop them on the cookie sheet in little circles, I did 8 at a time because I wasn't sure how much they would spread.
bake for about 14 minutes, let cool before transfering.


They are SO good! The kids love them and they ARE just like the muffin tops!  Hoping there will be some left after our visitors today so I can freeze them! If they freeze well, I'll let y'all know!

Back To School Treats!

I have seen lots of fellow bloggers planning back to school parties, we aren't having a party but I still want to make it fun for the kids (only 1 is going to school) I am pretty sure I won't be making ALL of these, but maybe a couple for the first week of school!

I made some cookies like these a few years ago for a sweet friends little girl, no pictures though, these are MUCH better than mine looked!

Peanut Butter and Jelly Martini's!!


Peanut Butter & Jelly Martini

1½ shots raspberry vodka
1 shot Frangelico
2 shots cranberry juice
Place all of the ingredients into a cocktail shaker with ice and shake well. Strain into a cocktail glass to serve.


PBJ Shooter
½ shot Frangelico
½ shot black raspberry liqueur
Pour into a shaker with ice and shake well. Strain into a shot glass to serve.


I will probably post our decorations tomorrow, if the kids take good naps!

Chocolate Chip Walnut Bacon Cookies

A little crazy but YUM!




A girlfriend was making Chocolate Dipped bacon as a treat for Easter and  it made me think I could do it in a cookie.. THEN I saw on a blog today someone else did a cookie.. so I figured I needed to try something! I cheated (and I don't even feel a little bad about it) and used a Betty Crocker Chocolate Chip Cookie mix (dry, in the bag, not refridgerated) I added the ingredients as the package said, but I also added 1C. chopped walnuts and 5 STRIPS OF CRISPY COOKED BACON! YES bacon! mixed it all together and cooked as directed on package.. Probably my new favorite treat! The bacon adds just a little salty, crunchy yumminess!!   Go on.. Try it!!

First Day of Spring

Do you have all your Spring cleaning projects started, finished even? I sure hoped to, but I don’t. Instead I got my wisdom teeth out, THAT is a whole other kind of spring cleaning I was NOT prepared for! So with the first day of Spring quickly approaching (tomorrow!) I am trying to recover and get it all done. I am also pretty sure I will need to reward my littles and hubby for all their help cleaning, AND taking care of me, with some sugar cookies!! Ikea had THE cutest cookie cutters, perfect for spring.. Just had to share!  I think I will make the snails and I maybe hedgehogs.. the others aren't as "Springy" to me.. and maybe some mini mushrooms!





I am slowly working on getting my Spring/Easter decorations out.. I will post some pictures soon!  If I feel up to it and can stop watching New Moon.. comes out tonight/tomorrow depending on how crazy you are.. Redplum.com has a coupon for it also!

Hope Everyones Valentine's day was great!

Hope everyone had a great Valentine's day!! We stayed home and tried to relax! Made some cute biscuits.. and I cheated, I used the premade biscuits this time.. And I made the stew in the crockpot.. It was much easier this time.. and leftovers are JUST as good! Our kids are quite the little cookie monsters... so we made sugar cookies and decorated them.. The frosting is powdered sugar, milk, marshmallow flavoring (I was out of Vanilla) and a little Light Corn syrup.. I think it makes them a little more shiny! And my favorite pink cocktail (or only, since I don't drink much) It's just 1 1/2 oz of Tequila Rose (tastes like strawberry) and 1 oz vanilla coffee creamer mixed and then the glass filled with milk.. I have seen other versions that also add an ounce of Creme de Cacao.. that is a little too strong for me, but it sounds yummy! I took down allll that pink and red yesterday.. now I am cleaning and working on St.Patricks day stuff (I hardly have any) I plan on doing the same kids things as I did last year..



I will take pictures of the jars this time though. I did get a couple new things since last year.. a little green vase and a green tray that has a cute little shape.. I snagged a couple colors I liked it soo much! I just have 1 little clover candy dish but I added some skittles to it.. for the Rainbow look. I have been looking for a couple other rainbow things.. finding NOTHING! I will post some pics once I have stuff up!!
 
I dont think I mentioned it on here at all, but our littlest kiddo is having surgery next week.. I JUST started a blog so family (and whoever else wants) can see the before and after pics and get some info.. it's hard to explain it over and over to family and friends... I am pretty emotional about it.. He just seems SOO tiny to be having surgery (he will be 5 months the day before his surgery). So it will be quiet over here but hopefully busy over THERE.
I can't wait to have it all over and done with.. Once we are home I will feel much better about everything.. and I am READY to Spring Clean.. so I might post a few more times between now and his surgery.. I like to PLAN before I do any cleaning! The other big thing we have going on is the baby stuff sale I participate in 2 times a year.. I have bins and bins of stuff that need to be organized since last time and prepped and all that.. Every sale I hope to sell everything... but it doesnt usually work that way...By the way Oregon Mommy's, Sale is March 13th in Salem at Blanchet Catholic School 9am!!
