Peach Bourbon Scones

I am a sucker for both peach and bourbon! At the grocery store the other day the peaches just looked really good! I grabbed a few and threw this recipe together.  I never know how something will turn out the first time, but GOODNESS was this just right! Not too sweet, just peachy 🍑

Directions
Preheat Oven to 400
Dice up 1-2 peaches (I prefer smaller chunks) sprinkle with a little sugar and set aside

Mix 2 1/4 C Flour
1/3 C Brown Sugar
1Tbs Baking Powder
1/2 tsp Salt

In a separate bowl mix
1 Egg
1/4C Vanilla Yogurt
 3 Tbsp Whipping Cream
1/2 Tbsp Vanilla Extract
2 Tbsp Bourbon

Cut in 1/2C cold cubed butter into dry mix until it's all crumbly.
Add wet ingredients slowly into dry ingredients, mix only until combined.
Fold in peach chunks (about 3/4C)

Dump onto well floured surface, shape into circle about 1/2" thick. Cut into 8. You can make mini ones from there or leave all 8. Separate and place on parchment paper lined baking sheet.
Bake 18-20 minutes (less for mini ones)

While they are baking, mix up some glaze
Sifted powdered sugar, whipping cream and bourbon
I didn't measure because I often forget to.
But I prefer a thicker glaze.

Once the scones are done, move to a cooling rack and brush glaze on once cooled.

Enjoy!
